MCYC ~ Chocolate Cake Recipe

I wanted to share with you the recipe I use for my chocolate cakes and cupcakes, but thought it would be much easier sharing it with you here on my neglected blog! This way I can post step-by-step photos and share with you the tips I use when I am baking and creating my cakes!

I have used this recipe for a while now and it is my go-to, never fail chocolate fav. It's moist, not too rich, not too dense, not to sweet, easy and it freezes well. Unfortunately I don't know who the original source is as I was given this recipe by a good friend of mine one day, over the phone, and I scribbled it down on a scrap of paper. Thankfully I transferred it to my recipe journal! She had found it in a magazine while waiting at the hospital one day. So thank you to the hospital and magazine for sharing!

So here it is, My Cake, Your Cake's Chocolate Cake Recipe! Oh and there's a printable link at the end too!

Chocolate Cake or Cupcakes

You will need:

1 1/2 cups (330g) Caster Sugar
1 cup (250g) Water
125g Unsalted Butter
2 tablespoons Cocoa
1/2 teaspoon of Bicarbonate of Soda
1 1/2 cups (250g) Self Raising Flour
2 Eggs (Room temperature)

 
Now before I go on, it's a little different from the normal recipe, but stay with me, honest!

Pre-heat your oven to 180'C or 170'C fan-forced. Next time you're at the shop and you have some lose change to spare, grab an oven thermometer from a kitchen store. One of the ones you hang from the wire shelf in your oven. I got mine for about $8 and it's awesome. For such a basic little gadget, it's been very handy to have hanging in my oven and I now know that my oven is about 5 - 10 degrees different from the dial. Who would have thought!




If you're going to bake a cake, grease and line your chosen tin. I mostly use an 8inch round (20cm). For cupcakes you will need two 12 capacity trays lined with cupcake papers as you will get 18-22 cupcakes from this recipe depending on the size of your papers and how generous you are at filling them.

I have found the easiest way to seperate the cupcake papers from the stack
is to take them off from the bottom, not the middle

Grab a medium saucepan (and a set of scales if you're the weighing type). Measure into your saucepan the sugar, water, butter, cocoa and bicarb.

 
Over a low heat, stir until the sugar is dissolved, about 5 minutes, increase the heat slightly until the mixture begins to froth.

Technically you're meant to sieve the cocoa, I don't, hence the lumps!

Pour this chocolate mixture into a separate bowl and let it cool for around 30 minutes.  When it's cooled, it will have formed a skin on the surface. Don't worry it's meant to do this, and it's really quite yummy, kind of fudgy, mmm  ... If you do happen to be in a rush or impatient like me, then you can skip this cooling step, BUT you will need to be careful so you don't scramble the eggs!


Now add your self raising flour and eggs to the chocolate mixture and with an electric mixer, beat for about 2 minutes on high. Once mixed, pour into your cake tin or cupcake papers. If I'm doing cupcakes, I like to pour the mixture into a jug. This just makes it easier to fill the papers evenly and without spilling it everywhere.


Put your cakes/cupcakes into your pre-heated oven in the middle shelf and bake. For an 8" round cake, bake for 40-45 minutes, and for cupcakes, bake for 20-25 minutes. They are cooked with they spring back to the touch or when a toothpick poked in comes out clean! Cool on a wire rack.



Ta daaa! Now all that's left to do is to ice and decorate! This batch round I actually got 21 cupcakes. The above 12 went to a party and the rest were iced and went into the freezer for lunchboxes.

Now if you like to be more organised and give yourself a bit more time before a party, bake your cake/cupcakes 1 or 2 weeks before the party. Once baked and cooled, if you are going to fill your cake, cut in half and put a piece of baking paper in between the layers ready for the filling of choice. Then wrap 2 or 3 times in cling wrap and freeze until required. For cupcakes, put them into an airtight container and freeze until required. More often than not I will freeze my cakes. It takes some of the stress out of the decorating that is to come. Then take your cake out of the freezer just before you are ready to start decorating.

I know there are a few Thermomix owners out there, this recipe is even easier to do in your Thermomix, yay! And of course it takes less time to prepare making it much quicker and achieving the same results.

So if you are a lucky owner, here is the conversion:
  • Using Raw Sugar instead of caster sugar, weigh in your raw sugar first and mill until fine (30 seconds - Speed 7)
  • Weigh in each of the other ingredients (except for the flour and eggs) and mix together (Temp 90' - 6 minutes - Speed 2) At the end of this step you should still get the froth on top and you don't have to let it cool in the fridge, go straight onto the next step.
  • Weigh in the flour first, then add your eggs and mix together (20 seconds - Speed 5-7) Scrape down sides and mix again (10 seconds - Speed 5-7)
  • Pour mixture into cake tin or cupcake papers and bake as above.

Happy NYE ~ re-cap!

Another year gone! Where does the time go! This post is more of a re-cap since it is now March 2012, hehehe!

We ended up going to the Perth Zoo for our New Years Eve celebrations! This was our second time here and if you happen to live in Perth then I highly recommend trying to get your hands on the tickets for this year! It is such a great night, not just for the kids but for all ages! The animals are awake until 7pm and they have an early count down at 9pm with fabulous entertainment!

So as a last minute project, I raced to our local Target and picked up a plain white T-shirt each for the girls, I think they were only $5 each, and then stopped in at Spotlight for some fabric paint ...



 Sparkly of course!

And then I took to the t-shirts and added some new year's eve festive cheer!


And let it dry for a couple of hours ...


Ta daaa! I thought they looked great! Quick, easy, cheap and fun!


{ L O V E }

But ~ unfortunately I didn't listen to my inner self ... "Iron the paint before you wash them ... Iron the paint before you wash them !!!" No I did not listen ... Instead I just threw them in the wash, and they came out like brand new ~ only a couple of splodges of paint left ... oh well! They enjoyed them, I enjoyed them and now I have 2 blank canvases!

Sunshine Subway

Our littlest Miss does a lot of singing ~ as most toddles do I suppose! But one song that she has learnt and one that I particularly love is "You are my Sunshine", and when your 3 year old sings it, I love it, and her, even more * Mummy loves you baby girl! *

Anywho! Since she was singing it so often, I thought I'd capture the moment with a bit of subway art ...


Since this was done way back when in December of last year { oops! } she has now moved on to another song, not quite as cute but great just the same, our Australian national anthem ~ I will have to record her singing it one day with her 'new' lyrics!

I am still here!

My poor little blog ... I have so many things that I would like to post but I keep running out of time!

So hopefully with a goal set of ~sometime in March~ I will fill you in on what I've been up to since, I don't know when!

Well, since I am sitting here and little Miss is happy practising her letters next to me ... here is something I whipped up sometime back in November I think ~ oh dear it has been a while!

* Update! It was actually October! 4 months of neglect, I am a good person, really!

Lemon Butter ... mmmm


I made this in my Thermomix, super easy, and recycled some pasta sauce jars. A little colourful fabric over the lid and a cute tag that I whipped up!

It was delicious ~ and I still have one jar left ... maybe some lemon meringue pies ~ double mmmm ...

Ladybugs for our Littlest Lady

We are lucky enough to have two little ladies in our home, and our littlest lady just turned 3! Unfortunately it's at precisely that age that they are losing or have lost their 'baby-ness'. So that's enough of an excuse for me to celebrate in a BIG way! Oh, and to finally get some professional family photo's done ~ but more on that another day!

Originally it was going to be a Peppa Pig party, but Mummy just happened to mention one day while reading a book that "that cute little ladybug there would make a super party!" which made her change her party thoughts instantly! Who would have thought *wink*

So while I will be holding onto my 'baby' for as long as I possibly can, we enjoyed celebrating her third birthday in the most Ladybug of ways!

Well, this little cake needs an introduction! Not for it's greatness, oh no! This little Ladybug was a disaster! I can tell you, and you MUST believe me, that the following photo's do not tell it's full catastrophic story! If you happen to visit my other page My Cake, Your Cake, you would have read that I had lost my 'Caking Mojo'! And when one needs to decorate a Little Lady's 3rd Birthday Cake the night before her party, that's not a good thing to lose! Unfortunately I think it was lost well before I had realised! You see, the party was on a Sunday, I had baked a cake on the Saturday morning, left it to cool while we went to the zoo {that was just fabulous! Face painting, merry-go-round, icecream, what joy!} When we got home I should have realised by the shape that it had cooled that I needed to bake a replacement ~ sunken top and concave sides! But hindsight being such a wonderful thing, I didn't listen, I ignored, and when I cut it open at 8:30pm (the night before the party) the cake was cooked, but it looked like play-dough, felt rubbery and looked just plain awful! So a re-baking I did, and waited patiently for it to cool, and at 11:30pm I was able to start filling and icing with buttercream. Then I went to bed.
There was no point in panicking, crying or screaming! It had happened, it happens, I'm not perfect, I just try my best. I had decided to explain to our daughter in the morning that I had tried my best and would it be ok if her cake was plain. {I love her to pieces} She said yes! Until she saw that it was plain white (from the buttercream), pouted and said "but I don't like white!"
So with 2 hours to spare in the morning, I managed to decorate ~ and I use that word loosely ~ her cake and make her eye's 'light up' with excitement. It was not what I had envisaged, it is not normally what I would be happy with myself, but it is what it is and I am now more than happy to accept it's outcome {even if there is a huge air bubble forming on the side and it looks like I've forgotten to write the start of her name!}

So there she is in all her disastrous but happy glory!

The one thing I have quickly learnt when making cakes is that we, the cake maker, are our own worst critics. {See above Ladybug cake as a perfect example!} To us, the makers, all of the imperfections stand out shadowing any of it's greatness, but the receiver of the cake sees none of this! I guarantee you that for every flaw we see, they will see twice as many outstanding features. Just look at their faces! They are so thankful, grateful and their huge smiles and twinkle in their eyes just speaks for themselves. Isn't that why we do this in the first place?!
So don't be so hard on yourself, cake, bake & decorate from your heart for that is only what anyone else would want!

Baby Baby ~ Last but Not Least!

My final play mat ~ for the moment ~ is for my new niece or nephew, soon to arrive with my fingers crossed for an October appreance!

I have enjoyed making all of these lovely quilts come play mats and have a new found admiration for all the quilters out there! I will enjoy even more the new arrivals that will be lounging around on those mats very soon!

It's cozy in here!

My bestie {BFF} happened to receive a tea pot for Mothers' Day this year ~ lucky duck! And if I'm to be completely honest I have a secret love for tea pots, even though I only own 2! Anyhoo ... she had mentioned that to keep her pot warm, she was wrapping a tea towel around it. Now there's nothing wrong with using a tea towel to keep those lovely leaves toasty warm, but when I came across this gorgeous and easy pattern for a tea cozy I thought of her and decided to make her one for her birthday!

So this is for you and Happy Birthday to my dear friend who always knows how to make me feel warm and fuzzy on the inside. Now your tea will feel rather posh as well as warm!


For those of you wishing to whip up a posh tea cozy of your own, you can grab the book "Quilting In No Time" by Emma Hardy, from here, then before you know it, that second cuppa waiting to be enjoyed will still be toasty warm.
